Garden Goodness Gazpacho

  • 4 large tomatoes, cut into cubes
  • 1 red pepper, cut into cubes
  • 1 cucumber, cut into cubes
  • 1 small onion, cut into cubes
  • 1 clove garlic
  • 2 teaspoons champagne vinegar
  • 1/4 cup bloody Mary mix
  • Salt and pepper to taste
  • 1 teaspoon honey
  • 1/2 cup olive oil
  • Pesto
  • Sour cream
  • Toasted French bread
  1. Place all of the vegetables in a blender and blend on high till the vegetables are smooth.
  2. Add in the champagne vinegar, honey, Bloody Mary mix and olive and blend.
  3. Season with salt and pepper as needed.
  4. Chill the soup for 3 hours or overnight.
