Southern Spicy Cornbread Salad

  • 1 pan cornbread, crumbled
  • 1 bottle spicy ranch dressing
  • 1 can of black beans, drained and rinsed
  • 1 can garbanzo beans, drained
  • 2 cups frozen corn, thawed
  • 1 small green bell pepper, finely chopped
  • 3 green onions, finely chopped
  • Cherry tomatoes, cut into 1/4
  • 2 cups finely shredded sharp cheddar cheese
  • 2 heads romaine lettuce, chopped
  1. In a large bowl layer in the following order: 1/2 of the cornbread, black beans, lettuce, corn, green peppers, 1/2 cheese, tomatoes, garbanzo beans and remaining cheese & cornbread.
  2. Before serving pour the salad dressing over the top and toss together!
