Roasted Garlic Broccoli

  • 3 heads of broccoli
  • 5-8 tablespoons olive oil
  • 3 cloves garlic, sliced
  • 1 teaspoon sea salt
  • Parmesan cheese
  • 1/4 cup chopped pine nuts or pistachio nuts
  • Lemon juice
  1. Preheat the oven to 425 degrees.
  2. Line a baking sheet with parchment paper.
  3. Remove the wide stalk of the broccoli and cut the individual florets from the base.
  4. Place the broccoli on the baking sheet and drizzle with 5 tablespoon olive oil and sprinkle with sea salt.
  5. Add the chopped garlic.
  6. Use a spatula to mix the broccoli and garlic in the olive oil to thoroughly coat.
  7. Place in the oven and bake for 20 minutes.
  8. Remove from the oven and quickly place the roasted broccoli in a serving bowl.
  9. Drizzle with the extra oil, juice of 1/2 fresh lemon.
  10. Add in the nuts and sprinkle with parmesan cheese.
  11. Stir together.
  12. Serve.
